cups chopped cooked chicken

cups shredded green cabbage

cups shredded red cabbage

cup shredded carrot (1 large)

cup sunflower nuts

cup low-fat Asian sesame-ginger dressing

cup chow mein noodles

  • 1 In large bowl, place all ingredients except dressing and noodles.
  • 2 Pour dressing over salad; toss to coat. Garnish with noodles.

This salad can be made several hours in advance, but do not add the dressing or noodles. Cover and refrigerate. Just before serving, toss with the dressing and garnish with noodles.

This salad was wonderful I choose to also add Manderine Oranges around the outside of the salad which enhanced the flavor,as well as added even more color.

I made this tonight for dinner - very easy and tasty. Perfect for dinner on a hot day. The only change I made was to use broccoli slaw mix since I couldn't find shredded cabbage of any color. And instead of mixing in the chow mein noodles, I left them out until serving time when I sprinkled them on top for garnish. That way they stayed crunchy. Will definitely make this again.

Four words...Quick-Simple-Tasty-Refreshing. I baked my chicken with a marinade of soy sauce,honey,and toasted sesame oil. Like Divine Sunshine, I also added mandarin oranges.
