Chicken Satay Salad

Ingredients

  • 2 packages (6 oz each) refrigerated cooked chicken breast strips
  • 3/4 cup Thai peanut sauce
  • 1 bag (5 oz) mixed salad greens
  • 1 cup julienne carrots (from 10-oz bag)
  • 1/4 cup chopped fresh cilantro

Steps

    In medium microwavable bowl, mix chicken and peanut sauce. Cover; microwave on High 2 to 3 minutes or until hot.

    Divide salad greens and carrots evenly among 4 plates. Top with chicken mixture and cilantro.

  • Peanut sauces vary in spiciness. Choose the one that suits your family’s taste.
  • If chicken strips aren’t available in your grocery store, substitute any cooked chicken breasts, cut into slices.
