Chicken Salad with Fruit
cups cut-up cooked chicken
cup sliced green grapes
medium stalks celery, sliced (1 cup)
medium green onions, thinly sliced (2 tablespoons)
can (11 ounces) mandarin orange segments, drained
can (8 ounces) sliced water chestnuts, drained
cup peach or lemon low-fat yogurt
tablespoons reduced-sodium soy sauce
Mixed salad greens
Mix chicken, grapes, celery, onions, orange segments and water chestnuts in large glass or plastic bowl.
Mix yogurt and soy sauce. Pour over chicken mixture; toss. Cover and refrigerate at least 2 hours to blend flavors. Serve on salad greens.
Fill up on fiber by serving this salad with slices of crusty whole wheat bread.
