ounces chunk chicken in can

half apple with peel left on

drops lemon juice

cup Reduced Fat Mayonaise with Olive Oil

cup mexican four cheese shredded (leave out if watching calories or colestoral)

package wheat pita bread
  1. Put raisns in about 1/4 C water & microwave 1 min. cover let stand. Drain liquid from chicken, flake with fork. Mince apple with peel add lemon (keeps it from turning brown). Mince celery, raisins should be plump by now so chop them up, add all this plus the sunflower seeds to chicken. Mix together well, now add mayonaise & if you like add splenda stir until ingredients are well blended together. I also stirred in the cheese. :-)
  2. You can let Chicken Salad wait until you are ready to eat, just put lid on bowl and refridgerate. Next take a round of pita bread, cut in half & very carfully open the two layers to make a pocket. Fill the pita pocket with Chicken Salad or if you like you could put a couple leaves of romane lettuce in pocket first then add the Chicken Salad.
  3. I served it with fresh cut veggies & Ranch Yogurt dip, instead of chips. Enjoy!
