Chicken Pot Stickers

Crispy brown on the bottom, light and soft on the top, these wonton dumplings are worth the effort.

Ingredients

pounds ground chicken
1/2
cup shredded green cabbage
1/3
cup chopped green onion (4 medium)
2
teaspoons chopped gingerroot
1
teaspoon sesame oil
1/4
teaspoon white pepper
1
small red bell pepper, finely chopped (1/2 cup)
1
egg white
1
package (10 ounces) round wonton skins
2
cups Progresso® chicken broth (from 32-ounce carton)
4
teaspoons soy sauce

  • 1 Mix all ingredients except wonton skins, broth and soy sauce.
  • 2 Brush each wonton skin with water. Place slightly less than 1 tablespoon chicken mixture on center of skin. Pinch 5 pleats along edge of half of circle. Fold circle in half over chicken mixture, pressing pleated edge to unpleated edge. Repeat with remaining skins and chicken mixture.
  • 3 Spray 12-inch skillet with cooking spray; heat over medium heat. Cook 12 pot stickers at a time in skillet about 3 minutes or until light brown; turn. Add 1/2 cup of the broth and 1 teaspoon of the soy sauce. Cover and cook 5 minutes. Uncover and cook about 1 minute longer or until liquid had evaporated. Repeat with remaining pot stickers, broth and soy sauce.

I am surprised that with all the reviews here, no one has suggested salting the cabbage for about 15 minutes to draw off of its moisture. For anyone else that may be interested, besides adding some salt to the cabbage to draw off excess moisture from it. A major improvement to the recipe is to add several cloves of minced garlic to the meat mixture. When frying, do it in batches of about 10-12 in a non stick skillet.... Add about a tsp of Sesame oil with the broth and soy sauce per batch. It will make a major difference for a more authentic Potsticker. This recipe was a bit too generic.

These were my first attempt at potstickers and they were very good! My family loves pot stickers and we oder them often when we go out. These were as good as any we have had. I followed the directions exactly with the exception of the ginger. I used 1/8 t. of ground instead of 2 t. chopped.

A little tedious to make, but we tend to make a ton and freeze them for later - for a night when we don't have quite so much time (just make sure to thaw them first, or they will be raw in the middle). Well worth the wait though, very tasty, a definite crowd-pleaser. We had some stick to the pan and come apart, but practice makes perfect. We've also thrown them in the deep-fryer.
