Ingredients

cans (10 3/4 oz each) condensed cream of chicken & mushroom soup
1
can (10 3/4 oz) condensed chicken broth
4
cups cut-up cooked chicken
1
bag (1 lb) frozen mixed vegetables, thawed, drained

cups Original Bisquick® mix
1 1/2
cups milk
1/2
teaspoon poultry seasoning

Directions

  • 1 Heat oven to 375°F (350°F for glass baking dish). In 3-quart saucepan, heat soup, broth, chicken and vegetables to boiling, stirring constantly. Boil and stir 1 minute. Spread in ungreased 13x9-inch pan.
  • 2 Stir together remaining ingredients. Pour over chicken mixture.
  • 3 Bake uncovered about 30 minutes or until light brown.

I served this to several people who normally don't care for gluten-free recipes. They all really enjoyed it. This is one of the few meals that is totally gluten-free that I feel I can serve to everyone. (I usually have two dishes, one - the normal recipe and -2 - a side recipe adapted to be gluten-free.) The topping is similar to dumplings, not crusty like a pie crust. An excellent choice on a cold winter day.

Love this receipe and a great way to use leftovers. I also sometimes add some onions and frozen hash brown cubes in too to make it a bit more hearty
