tablespoon olive or vegetable oil

cloves garlic, finely chopped

medium green onions, sliced (1/2 cup)

medium carrots, chopped (1 cup)

cups cubed cooked chicken

cups uncooked egg noodles (4 oz)

tablespoon chopped fresh parsley or 1 teaspoon parsley flakes

teaspoon pepper

dried bay leaf
5 1/4
cups Progresso® chicken broth (from two 32-oz cartons)

Directions

  • 1 In 3-quart saucepan, heat oil over medium heat. Add garlic, onions and carrots; cook 4 minutes, stirring occasionally.
  • 2 Stir in remaining ingredients. Heat to boiling; reduce heat. Cover; simmer about 10 minutes, stirring occasionally, until carrots and noodles are tender. Remove bay leaf.

I love how easy this chicken soup is to make. It may not be the very best chicken soup I have ever had but it is pretty good, and even my kids ate it. And like I said, it's easy!

I grew up HATING canned chicken noodle soup, but I went ahead and made this for supper last night since my whole family is fighting colds and YUCK! The house smelled SO delicious even before it was finished simmering. This was a definite hit and has certainly changed my mind about chicken noodle soup. :-)

This was so easy and delicious! We omitted the green onions and added fresh chopped spinach to the mixture. My daughter and I had this for lunch today. We will definately make again!
