Chicken 'n Dumplings with Vegetables

From Betty's Soul Food Collection... It’s a little bit of heaven in one dish when you serve our Chicken ‘n Dumplings with Vegetables. Add a tossed salad with a light vinaigrette dressing and dinner is done.

tablespoons butter or margarine

lb boneless skinless chicken thighs, quartered

cups chopped onions

cup chopped celery

cloves garlic, finely chopped

bag (1 lb) Green Giant® frozen mixed vegetables
1 3/4
cups Progresso® chicken broth (from 32-oz carton)
3
tablespoons chopped fresh parsley or 3 teaspoons parsley flakes
1
teaspoon poultry seasoning
1/2
teaspoon salt
1/2
teaspoon pepper
1
cup milk
1/3
cup Gold Medal® all-purpose flour
1
can (10.2 oz) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits (5 biscuits)
1/2
teaspoon paprika

  • 1 In 4-quart Dutch oven or saucepan, melt butter over medium-high heat. Add chicken, onions, celery and garlic; cook 7 to 12 minutes, stirring occasionally, until chicken is no longer pink.
  • 2 Add frozen mixed vegetables, broth, parsley, poultry seasoning, salt and pepper; mix well. Heat to boiling, stirring frequently. In small bowl, mix milk and flour until smooth. Add to chicken mixture; cook and stir until mixture boils and thickens. Reduce heat to low.
  • 3 Separate dough into 5 biscuits. Cut each biscuit into quarters. Arrange biscuit pieces evenly on top of chicken mixture; sprinkle with paprika. Cover tightly; cook 30 to 35 minutes or until biscuits are fluffy and no longer doughy.

Poultry seasoning is a blend of herbs and spices such as thyme, sage, marjoram, rosemary, black pepper and nutmeg. Each of these seasonings goes well with poultry; mixed together, the combination provides a subtle, complex flavor the individual seasonings do not have on their own.

Just before serving, sprinkle the dumplings with chopped fresh parsley.

This recipe of Chicken 'n Dumplings went over very well. Easy to make and very delicious! I was looking for a recipe to match Mama's when I came across this one. But, I have to admit, following this recipe, mine came out better...sorry Mama...still love ya!!!!

This is one of our favorite recipes. My daughter asks for it often. I make it a lot quicker because instead of cooking the chicken, I buy a rotisserie chicken at the grocery store. It is very good!

This was really yummy. I had some trouble with my biscuits cooking through. I left it on low for an hour and they were still doughy. So I scraped them off and put them in the oven for 10 minutes and then put them back on the dish. Next time I will just back them in the oven and then add them to the dish. I didn't buy the name brand biscuits and I don't know if that was the problem? Otherwise, it was really hearty and flavorful.
