cup finely chopped peeled cucumber

cups cubed cooked chicken

cups red grapefruit sections (2 large grapefruit)

medium avocado, peeled, pitted, coarsely chopped

cups watercress sprigs (2 large bunches) or augurla
  1. In large bowl, mix dressing ingredients with wire whisk or spoon. Add chicken, grapefruit, cucumber and avocado; gently toss until evenly coated.
  2. Cover and refrigerate about 1 hour or until chilled. Serve on watercress.
