Good things still come in small packages! This chicken salad made just for two is a fresh blend of chicken, fruit and a hint of mint.

Ingredients

1/3
cup plain fat-free yogurt

tablespoons mayonnaise or salad dressing
1
cup cubed cooked chicken
2/3
cup seedless green grapes
1
large fresh peach, chopped (3/4 cup)
1
medium celery stalk, diced (1/2 cup)
1
teaspoon chopped fresh mint leaves or 1/2 teaspoon dried mint leaves

  • 1 Mix yogurt and mayonnaise in medium bowl until smooth. Stir in remaining ingredients.
  • 2 Cover and refrigerate at least 30 minutes until chilled.

This is a great recipe! Could do without the celery and I would even use two peaches, 1 is not enough! Easy to make and the mint is not overwhelming! yum!

I HAVE TRIED THIS BEFORE AND ALL I CAN SAY, IT IS SOO YUMMY! IT IS NOT SO FATTENING EITHER. TRY FRESH PEACHES WITH IT. IT MAKES IT EVEN YUMMIER.

I found out this past week my cholestrol is a little on the high side, so with that in mind I started trying to cut fats and lowering where I could. I found this recipe and decided to use the yogurt (fatfree) and leave out the mayo or salad dressing and it was wonderful. I''m sure a little of the fat-free mayo wouldn''t have hurt, but didn''t have any on hand, so tried it without it.....I did add a few pieces of mandarin oranges with the grapes too......thanks for such a great recipe........
