My family really liked these wraps. We mixed all the ingredients together, and they still tasted good for leftovers the next day. No problems with it getting "soggy". I would probably add a little more of the peppers next time to give it a little more zip. I also served them with sides of salsa and sour cream--delicious!

These were so easy and so good! Perfect for a hot summer night when you don't want to turn on the oven or stand over the stove. I made a couple of changes: 1/2 cup ranch dressing Juice from 1 whole lime 1/2 Tbs. chipotle in adobo (they're in the Hispanic Foods aisle in most grocery stores, for those who had trouble finding them) 2 Tbs. chopped cilantro (add to dressing) 11 oz. can Green Giant southwestern style corn (instead of fresh steamers niblets) Plus, we only mixed in the dressing to the amount of filling we planned to use, then stored the rest separately in the fridge. This helped keep the filling from wilting and getting soggy during storage.

Really easy and very tasty. Even my kids liked it. I was unable to find Chipotle chiles in adobo sauce, but did find a chipotle ranch dressing that I used instead. I will definitely be making this again.

Enjoyed the lime exposure; otherwise somewhat rich by way of the ranch dressing. Best to finish in one sitting as the flavor seems to change for a second go-round.
