Everyone at the party loved this. I am more picky and thought it to be so-so. If I made it again, I think I would go ahead and use fresh peppers.

Very easy to make. My family enjoyed the casserole the flavors were nice, I just added alittle more spice as we like spicy food. I also used fresh chicken and added the fajita seasoning to the chicken when I brown it.

I actually used ground beef instead of chicken. I didn't have any chicken but I wanted to try this. My substitutions were as follows: 1 lb of extra lean ground beef 1 can of diced tomatoes instead of tomato sauce 3 fresh red, yellow, and orange bell peppers diced 3/4 of a large onion diced taco seasoning instead of fajita seasoning. I browned the beef w/ a sprinkle of taco seasoning. Sauteed the onions and peppers in a tsp of butter til just tender. Followed the recipe from there. It was SPECTACTULAR!! LOVED it..will definitely be make this again and probably will try it w/ chicken eventually too.

I turned this recipe into a vegetarian meal as I eliminated the chicken. Similar to other reviewers, I substituted the tomato sauce with diced tomatoes. I also let me beans and tomato mixture (I used Lawry's taco seasoning) sit overnight which made it very spicy. This is a delicious, quick and easy meal! I took it to work for potluck Monday and it was a hit!

I made this last night and my husband and kids loved it. My oldest son is hard to please and usually does not like onions at all. But he gobbled this up and actually went back for seconds. It was very easy to make and delicious.

I made this for dinner last week and we loved it. The only thing I did different was used Rotel tomatoes & chilies in place of diced tomatoes. I also cut the tortillas into 8 triangles which is easier to dish out.

It was pretty good. My family really enjoyed while I did not so much. I think it was the fajita mix I used. Next time I think I will try using a taco mix and not cook the chicken plain. I used fresh chicken instead of the frozen strips. I also used fresh bell pepper and onions. I cooked the tortillas lightly on a pan to make them a little stiff so they wouldn't turn soggy. My family loves cheese so I added cheese through out the layers with beans and chicken. I definitely will try this again.

This was very delicious, we loved it! I made up my own Fajita seasoning mix, made my own southwest-style chicken and cut up my own green, red and yellow peppers and onions. I used just a little over 15 oz. of chicken and I'm glad I did. The amount called for didn't seem like it would be enough for a 13 x 9 casserole in which chicken is supposed to be the main component. I also didn't have any refried beans on hand, so I pureed up a 15 oz. can of red kidney beans (w/liquid) in my food processor and it worked perfectly. I used the Mexican cheese blend in this recipe. I will be making this often.

This was a great base recipe. Easy to make. I used fresh chicken sauteed with chili powder, cumin, and garlic. Sauteed fresh peppers and onions. Used corn tortillas which I browned in a skillet to help keep them from turning to mush. Instead of tomato sauce and fajita seasoning, I used homemade salsa that had been deemed too tomatoe-y to eat with chips. It was also spicier than plain tomato sauce which the bf and I both like. The bf took a taste and liked it a lot. He even went back for seconds. His only suggestion was to add fresh jalapenos to the pepper mixture. We do tend to like more meat in our dishes but that could have been helped by chopping the chicken to help spread it out more. I only wish I would have had shredded lettuce and sour cream to top it off with. Plenty of leftovers. I will make this again when it isn't so hot outside.
