A can of Progresso® Light soup just made it easier to create a tasty chicken casserole with a Mexican twist.

I'm not a very big fan of chicken, at all, but wanted to warm up to the meat and I picked the right recipe! This Casserole is so full of flavor. I followed the recipe and didnt change a thing. I highly recomend! This is one of my new favorites.

This is absolutely delicious. I added a little more rice and chicken and used tyson diced chicken breast. I also added 2 oz. of cream cheese instead of 1 oz. and added 1 tablespoon of cornstarch to the soup. This helps it not to be too runny. :-)

Made this and it was great. I did add extra rice, probably 1/2 cup at least. Also added some extra cheese. Next time I will double it and make a larger version. Very good.

This was an excellent recipe! I tried it for the first time on Monday and loved it! I did use more rice (1/2 c. instead of 1/4 c.) to keep it from being too runny for my liking. It has a great flavor to it and my husband who is a picky eater liked it as well.

This was such a yummy dish! I had to modify the ingredients due to what I had on hand. I used black beans instead of refried. I also used onion instead of green pepper and 1 cup of salsa instead of the soup. I added 1/2 tsp. of cumin instead of 1/4 and also 1/2 tsp. of chili powder to give it a kick! Delicious!

Made this tonight for the very first time...Very good casserole!!! My husband really enjoyed it!!! After reading all the reviews and comments, I did make a few changes...I added onions and green chiles, more rice and some of my own seasonings. Will definitely be adding this to our recipe box!!! Thank you!!!

This is easy to make and I tend to have all ingredients on hand. I skipped the bell pepper since I didn't have it but saw that someone else did onions so I did that. I tasted this in all stages as I cooked it and each stage it tasted better than the last. Finally when I added the cream cheese I was astounded at how it really blended all the flavors together and gave it a great comfort food feeling. I did at alot more rice than what the recipe called for - about 3/4 cup, I dont' like runny casseroles so I think this is a good balance. Also I used 2 chicken breasts. This makes alot more than 3 servings. The big test will be if my children eat it. Either way I will make it again - it smells great and looks awesome.

This was really good and would have probably been better if I would have had all the exact ingredients to make it. I would actually give this a 4-1/2 spoon rating. The changes I made were this: I added about 1/4 cup of diced onion when I added the green pepper and chicken. Definite plus. I also used Campbell's Nacho Cheese Soup instead of the Progresso 'cuz that's what I had in my cabinet. It says it serves 3, and I needed serving for 4, but didn't want to completely double the recipe. I did double the chicken, peppers, & cream cheese. I layered it in my round Pyrex baking dish, and ended up using 5 or 6 tortillas instead of 4. Overall a great recipe and I will definitely make again.
