Chicken Cordon Bleu Casserole

cup Green Giant® Frozen Sweet Peas
1/2
cup chicken broth
1/2
cup sour cream
1
(12-oz.) jar chicken gravy
5
oz. (3 cups) uncooked dumpling egg noodles
1/2
cup diced cooked ham
1
teaspoon paprika
1/4
teaspoon pepper
4
(4-oz.) boneless skinless chicken breast halves
1/2
teaspoon seasoned salt
4
(1-oz.) slices Swiss cheese, halved

  • 1 Heat oven to 375°F. In large bowl, combine broth, sour cream and gravy; mix well with wire whisk. Stir in uncooked noodles, peas, ham, paprika and 1/8 teaspoon of the pepper. Spoon into ungreased shallow 2-quart casserole.
  • 2 Place chicken over noodle mixture; sprinkle with seasoned salt and remaining 1/8 teaspoon pepper. Cover with foil.
  • 3 Bake covered at 375°F. for 30 minutes.
  • 4 Uncover casserole; bake 20 minutes or until chicken is fork-tender and juices run clear, and noodles are tender and thoroughly heated.
  • 5 Place 2 cheese slice halves over each chicken breast half. Bake an additional 5 minutes or until cheese is melted.

Expert Tips

Cordon Bleu is a classic French preparation of thin slices of prosciutto and Gruyère cheese between two thin scallops of chicken or veal. The meat and cheese stack is breaded and sautéed. This casserole has similar ham, Swiss and chicken flavors.

In place of the peas, try frozen mixed vegetables or cut green beans. Or omit them from the casserole and serve a vegetable side dish.

Ready-to-eat salad greens tossed with tomato wedges and French dressing complete an easy dinner.

I made this as directed and it turned out pretty good. I liked it and would probably make it again. As far as tasting "exactly" like a good Chicken Cordon Bleu, I wouldn't go as far to say that, but I would say it tastes more likes a cheesy chicken pot pie.
