Ingredients

Chili

cups cubed cooked chicken

cups water

can (10 3/4 oz) condensed cream of chicken soup

can (15 oz) navy beans, drained, rinsed

can (11 oz) Green Giant® SteamCrisp® Mexicorn® whole kernel corn with red and green peppers, undrained
1
can (4.5 oz) Old El Paso® chopped green chiles
1
teaspoon ground cumin

Dumplings

1 1/3
cups Original Bisquick® mix
2/3
cup yellow cornmeal
2/3
cup milk
1
teaspoon chili powder

  • 1 In 5-quart nonstick Dutch oven, heat chili ingredients over medium-high heat, stirring occasionally, until bubbly.
  • 2 Meanwhile, in medium bowl, stir dumpling ingredients until soft dough forms.
  • 3 Drop dough by 6 rounded spoonfuls onto simmering chili. Reduce heat to medium-low; cover and cook 13 to 15 minutes or until dumplings are dry.

This recipe is a keeper. I'm giving it 4 spoons as it did need some tweaking. I added sone seasonings to the chicken while I cooked it seperately. I also added lots more chili powder as we like it spicy and some garlic salt. Also as a time saver I cooked up some biscuits in the oven and topped the chili with them. Thought it would be good with some paprika as well next time. Very quick which is a plus especially if you cook the chicken up the night before.

Made this recipe for my husband and we loved it. He wasn't crazy about the dumplings, but I loved them. It was like having a piece of cornbread sitting on top of the chili. One of the easiest dishes I've ever made and we were sitting down to eat within 30 minutes. Will be a great dish for the days I work.
