This is o.k. but obviously not authentic. I love Old El Paso products but I make my own enchilada sauce and pico de gallo. Authentic enchilada sauce uses no tomato products. It is red because of chile powder. It is hard to find an authentic recipe for red enchilada sauce but it is easy to make.

Everyone oohed and ahhed at work the next day when I brought in the left overs, the crust was moist and the filling was good, maybe need some more kick, I'll use medium enchilada sauce instead of mild next time. It was quick and easy, and helped clean out the fridge and pantry!

BTW almost exact recipe as Chicken Tamale Pie except this has enchilada sauce and the other uses taco seasoning mix. Both are still great!

If you like enchiladas, you'll like this receipe. Didn't take long to prepare and was good too. Might try using hamburger meat next time.

The crust was too thick. Next time, I'll cut the crust part in half and maybe add black beans to the chicken. It wasn't so terrible that I won't try it again, but not quite a favorite so far.

We threw it out- Love practically every impossible pie, but this was terrible. The conbread topping was so dry and thick. What a waste....

My family loves this recipe, it is now a favorite in our household. This with a side of spanish rice makes it a dinner to brag about. Thank you so much for this recipe. The only thing I do different with 5 kids in the house, is use a roasted whole chicken from the local supermarket.
