Excellent! I doubled the recipe to take to a potluck. Everyone loved it. I did add about a cup of diced tomato. I just tossed it in at the end.

Just the thought of adding Chicken to Carbonara is rediculous to me. But oh well, it will make a good meal. I prefer a true Carbonara. And my Italian friends tell me you don't need to add cream... you know. But chicken.... ugh.

have made this dish a couple of times with it the original recipe, adding mushrooms fried in butter to it once and it is a keeper! I can't see why you can't add some chopped up/diced veggies to the beginning process or add it to the boiling water when doing up the spaghetti, will try this next time around. I find that I need to add more than what they require for the whipped cream/heavy cream and the cheese is a preference if you want to add more or not, as I find it to be enough. very rich dinner/lunch.

I gave a short review of this recipe a few days ago and I'm back to give another one. I substituted half and half for the heavy cream and it worked fine but I'm sure it would have been much creamier if I had used the heavy cream. When I heated our left-overs last night I cooked a bag of California style mixed vegetables (cauliflower, brocolli, & carrots) and cut them into smaller pieces and encircled the carbonara with the veggies and topped with fresh (from our homegrown) tomatoes. This was very good! I decided there was no reason the veggies could not be used on the 'first round' of the carbonara. I highly recommend this recipe.
