small onion, chopped (1/4 cup)

cups Progresso® chicken broth (from 32-oz carton)

cup water

teaspoon Italian seasoning

bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen broccoli & cheese sauce

package (9 oz) refrigerated cheese-filled tortellini
1
cup cubed cooked chicken
1
large plum (Roma) tomato, chopped (1/2 cup)
1/4
cup shredded Parmesan cheese

Directions

  • 1 In 2-quart saucepan, heat oil over medium-high heat. Add onion; cook about 2 minutes, stirring frequently, until crisp-tender.
  • 2 Stir in broth, water, Italian seasoning, frozen broccoli in cheese sauce and tortellini. Heat to boiling, stirring occasionally and breaking up broccoli.
  • 3 Stir in chicken. Cook about 4 minutes, stirring occasionally, until tortellini are tender. Stir in tomato. Top each serving with 1 tablespoon cheese.

We weren't crazy about this soup. There isn't enough broth to call it a soup as far as I am concerned. I added extra broth but then it didn't seem to have a whole lot of flavor. Don't think I would make this again. had the soup again the next day and it was better but the broth was soaked up by the tortellini

My boyfriend and I love this recipe! It's so good and really easy to make! It just seems that the soup part gets soaked up by the tortellinis but we usually add a little more broth and it's good!
