I really love this recipe. I served the chicken with brown rice and broccoli. I highly suggest doubling the sauce recipe, though.

I fixed this for dinner the other night. My son and I really enjoyed it. Sent him home with a copy of the recipe. We both decided to try the other variation with apricot jam. I used Smucker's All Fruit orange marmelade. Turned out very good. Perfect for someone who has to watch what they eat. Fit right in with my diabetic food plan. I served it with brown and wild rice.

This recipe is so easy and the result is fantastic.I make this recipe every couple of weeks and is always a hit.I do add ground pepper and onion flakes to the glaze as it was a little too sweet for my taste.The additions help balance out the marmalade more.

We really enjoyed this dish!! Great blend of flavors. We were out of orange marmalade so I used the juice and pulp of a fresh orange and also added some honey. My son suggested cutting the chicken breast in chunks before cooking, for a more oriental flair. I''ll try that next time.
