Deliciously good thin chicken breast with fresh spinach, ricotta cheese and Panko bread crumbs.

clove garlic, minced

green onions, chopped

teaspoon Italian seasoning

teaspoon ground red pepper (optional)

cup panko bread crumbs

cup baby spinach

tablespoons dijon mustard
salt & pepper to taste
  1. Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil. In a small bowl, mix the ricotta cheese, green onion, garlic, Italian seasoning and red pepper. Set aside.
  2. Butterfly chicken breasts. Place in a sealable plastic bag and pound until flat. Spread 1 tsp of cheese mixture over each chicken breast. Add spinach to the top of the cheese mixture and sprinkle with salt & pepper.
  3. Roll the chicken breast up. Brush outside with dijon mustard. Roll in panko bread crumbs. Place on cookie sheet.
  4. Bake chicken breasts for approx 45-55 minutes until done.
