Chicken and Spinach Rollup

Deliciously good thin chicken breast with fresh spinach, ricotta cheese and Panko bread crumbs.

Ingredients

3
chicken breasts
3
tablespoons ricotta cheese
1
clove garlic, minced
3
green onions, chopped
1
teaspoon Italian seasoning
1/3
teaspoon ground red pepper (optional)
1/4
cup panko bread crumbs
1
cup baby spinach
3
tablespoons dijon mustard
salt & pepper to taste

Directions

  • 1 Preheat oven to 400 degrees. Line a cookie sheet with aluminum foil. In a small bowl, mix the ricotta cheese, green onion, garlic, Italian seasoning and red pepper. Set aside.
  • 2 Butterfly chicken breasts. Place in a sealable plastic bag and pound until flat. Spread 1 tsp of cheese mixture over each chicken breast. Add spinach to the top of the cheese mixture and sprinkle with salt & pepper.
  • 3 Roll the chicken breast up. Brush outside with dijon mustard. Roll in panko bread crumbs. Place on cookie sheet.
  • 4 Bake chicken breasts for approx 45-55 minutes until done.
