Chicken and Ravioli Carbonara

Ingredients

tablespoons Italian dressing
1
lb boneless skinless chicken breasts, cut into 1/2-inch strips
3/4
cup Progresso® chicken broth (from 32-oz carton)
1
package (9 oz) refrigerated cheese-filled ravioli
1/2
cup half-and-half
4
slices bacon, crisply cooked and crumbled
Shredded Parmesan cheese, if desired
Chopped fresh parsley, if desired

  • 1 In 10-inch skillet, heat dressing over high heat. Cook chicken in dressing 2 to 4 minutes, turning occasionally, until brown.
  • 2 Add broth and ravioli to skillet. Heat to boiling; reduce heat to medium. Cook uncovered about 4 minutes or until ravioli are tender and almost all broth has evaporated.
  • 3 Stir in half-and-half; reduce heat. Simmer uncovered 3 to 5 minutes or until sauce is hot and desired consistency (cook longer for a thicker sauce). Sprinkle with bacon, cheese and parsley.

The less time the sauce is cooked, the thinner it will be; if cooked longer, the sauce will become thick and coat the ravioli.

For a splash of vibrant color, cut one orange or red bell pepper into 1/4-inch strips and add to the skillet with the broth and ravioli.

I tried this last night and it was decent, however the sauce did not resemble what I see in the picture. By the end it looked like all the liquid was evaporating and the half and half was curdling rather than a sauce thickening. When we added parmesan it made it do-able. I rated it 3 stars because my husband still enjoyed it. I will likely not make this again unless my husband requests it. Like I said, it was decent, but did not sit well with my stomach.

I tried this recipe for the first time last night. It turned out great! My husband and I loved it. I was worried about it not having enough flavor, especially because of the one review saying it was tasteless. But the Italian dressing gave it all the flavor it needed, and it was delicious. I will definitely be adding this recipe to my meal rotation. I used Zesty Italian dressing, which gave it great flavor. Maybe the reviewer who said it didn't have enough seasoning used a lackluster dressing. :)

I absolutely love this! I have made it twice so far and it was as delicious both times! I use a little more dressing and add oregano and basil to it. I also double the ravioli so that I can have the left overs. I use 2-3 big chicken breasts and that is plenty. I also double the broth. I let it cook for at least 10-15 min in the broth and make sure that the ravioli is done. I also top with shredded parmesan, not grated... My husband and daughter don't even like pasta but they LOVE this dish! Which is great for me because I am a HUGE PASTA LOVER!! This only takes like 30-45 min from the time you heat the pan till the time you start eating. If yours has no flavor, you need to get a better dressing. And make sure you cook in the chicken in the dressing before you add the ravioli and broth.
