Chicken and Orzo Supper

Ingredients

tablespoon vegetable oil
1
lb boneless skinless chicken breasts, cut into 1/2- to 3/4-inch pieces
1
clove garlic, finely chopped
1 3/4
cups Progresso® chicken broth (from 32-oz carton)
1
cup uncooked orzo or rosamarina pasta (6 oz)
1
can (14.5 oz) Italian-style stewed tomatoes, undrained
1
medium zucchini, cut lengthwise in half, then cut crosswise into slices (2 cups)
2
tablespoons shredded Parmesan cheese

  • 1 In 12-inch nonstick skillet, heat oil over medium-high heat. Cook chicken and garlic in oil 4 to 6 minutes, stirring frequently, until chicken is brown.
  • 2 Stir in broth and pasta. Heat to boiling; reduce heat to medium. Cover and cook 10 to 15 minutes, stirring occasionally, until pasta is tender and most of liquid is absorbed.
  • 3 Stir in tomatoes and zucchini. Cook uncovered 5 to 10 minutes, stirring occasionally and breaking up tomatoes with spoon, until zucchini is tender. Sprinkle with cheese.

For a change of pace and a little stronger cheese flavor, look for shredded Asiago cheese in containers near the other cheeses.

This dish was absolutely fabulous. I made it according to directions and fed 6 people with a chance for 2 to get seconds. My family does eat bigger portions though. This out of the recipes I have tried this week is by far the absolute favorite and I have gotten requests to plan on making it again. It was so fast and easy to make I was able to get home after work and throw it together with no problem. I topped mine with a dollop of sour cream and it was heavenly. This is definitely a top contender!

Very good meal! I did make little changes to it. I added chopped onion with the garlic and instead of the zucchini, I used green cut up Green peppers. But it was quick and easy meal that tasted great

Great meal! These are the tweaks I made to make the recipe to my family's liking: I added some Italian seasoning while sauteing the chicken, it helped to give it a little more flavor. I also added a small onion with a few extra cloves of garlic to the chicken/garlic as well. One other addition I made was putting matchstick carrots in with the zucchini and tomatoes. Do to lactose-intolerance in the family, I left out the Parmesan cheese, and it really wasn't missed although I think it would taste wonderful with it as well. The family loved it and it is a keeper!
