Chicken and Corn Chili

Chicken chili with corn. Good on cold days when beef chili just won't cut it.

Ingredients

lb chicken breast
1
med green pepper
1
med sweet onion
1
jalapeno
2
cups chicken broth
2
cans cannalini beans
1
can diced tomatoes and jalapenos or ro-tel
2
tbs corn meal
1/2
tsp cumin
1/2
tsp cayenne pepper
3/4
tsp salt
1
bag frozen corn
montery jack cheese

  • 1 Chop green pepper, onion, and jalapeno. Combine chopped vegatables chicken broth, chicken breast, 1/4 tsp cumin, 1/4 tsp cayenne pepperand 1/2 tsp salt in crock pot. Cook on low for 6 hours or high for 4 hours. Remove Chicken and set aside to cool. Once cool shred chicken and return to crock pot. Add ro-tel, corn meal, 1/4 tsp cumin, 1/4 tsp cayenne pepper, frozen corn, and beans. Smash some beans against side of pot to thicken chili. Turn crock pot to high for 30 - 40 min until corn is hot and chili is heated through. Sprinkle with montery jack cheese.
