Chicken chili with corn. Good on cold days when beef chili just won't cut it.

cans cannalini beans

can diced tomatoes and jalapenos or ro-tel

tbs corn meal

tsp cumin

tsp cayenne pepper

bag frozen corn
montery jack cheese
  1. Chop green pepper, onion, and jalapeno. Combine chopped vegatables chicken broth, chicken breast, 1/4 tsp cumin, 1/4 tsp cayenne pepperand 1/2 tsp salt in crock pot. Cook on low for 6 hours or high for 4 hours. Remove Chicken and set aside to cool. Once cool shred chicken and return to crock pot. Add ro-tel, corn meal, 1/4 tsp cumin, 1/4 tsp cayenne pepper, frozen corn, and beans. Smash some beans against side of pot to thicken chili. Turn crock pot to high for 30 - 40 min until corn is hot and chili is heated through. Sprinkle with montery jack cheese.
