Made this recipe last weekend and it was a major hit! I always read the reviews before hand for substitution ideas. I followed the advice from others about the flavor combination not meshing well. (taco seasoning and spanish rice together) I skipped the taco seasoning and just used spanished rice. I have already had requests for it again next week. This recipe is highly recommended in my family!

In response to ambahsteve21's question about substituting the black beans: You can replace them with an unlimited amount of ingredients including any kind of other legume (bean or pea, ie: pintos, kidney beans, lentils, garbanzos or black eyed peas would even be good). If it is the "bean" part you don't care for you could sub. canned or frozen corn or maybe hominy which would also be good but you would in this case be loosing much of the nutrient content which the beans provide but it would compliment the other ingredients very well. (Beans are an inexpensive filling ingredient which are a high quality almost fat free source of protein as well as cholesterol lowering fiber!) The other thing I would change to those of you complaining about the flavor is using plain long grain white rice instead of the spanish rice mix or leaving out the taco seasoning, one or the other but not both. I find that the flavors are a bit over powering and A LOT of sodium (salt). Instead I would add diced tomato and fresh cilantro and season as you would like for a fresher taste. A can of diced green chilies or if you really like it spicy chop a few slices of pickled jalapeños or one fresh chili minced along with some fresh garlic. (I just like fresher flavors then all of the flavor coming from the already seasoned rice and the taco seasoning.
