I just finished making several batches of this for gifts. It is delicious. I did double the caramel mixture for each batch and also used cashews instead of peanuts because that is what I had on hand. When it came out of the oven I lightly sprinkled it with sea salt. It was just enough to balance the sweet from the caramel. It is now our new favorite Chex mix.

I made this yummy snack for my family tonight, and while it was very tasty, I think I will make a couple modifications next time to increase the WOW-factor. I did swap out the peanuts for almonds because we have peanut allergies in the house. And I doubled the butter, sugar, corn syrup mixture to give it a little more gooey feel. And the thing I think I'll try next time will be to use the Cinnamon Chex in place of the corn...should go really well with the brown sugar flavor!

Sidenote: Not all honey-roasted peanuts are gluten free! Remember to check your labels!

This recipe is wonderful. I made it for a baby shower and had to make more before the shower....LOL... went over well with everyone. Just added 1/4 cup of cashews to the mix as well.

I made the first batch and it was great! I wanted to change a bit to the recipe so I revised the next batch by doubling the caramel and adding 2 additional cups of popcorn. I then blended the 2 different variations of this recipe and it was outstanding!!! Thanks for sharing such a fun great tasting recipe!

This is a really great recipe to fix. I have had so many people ask me for the recipe whenever I make it I just give them my copy. Then I just download another copy of it. It is such a simple and easy recipe to fix. Not only that, it tastes wonderful too! It isn't that sweet like some caramel corn recipes are. It's super! Thanks!

Awesome caramel corn! This recipe was so simple and yummy! I also doubled the popcorn (kettle corn flavor)and used peanuts. The kettle corn flavored popcorn lends a slightly salty flavor to match the sweet of the caramel. I am replacing my old recipe for this one.

This is delicious and very addicting. I didn''t have cashews so I just used whatever nuts I had on hand. Took to some friends house on a game night and there was no problem finishing the whole bowl!
