Enjoy these chewy drop cookies made with barley, assorted nuts and a hint of cinnamon – ready in 45 minutes.

Ingredients

1/3
cup canola oil
1/2
cup granulated sugar
1/4
cup packed brown sugar
1/4
reduced-fat mayonnaise or salad dressing
1
teaspoon vanilla
1
egg
2
cups rolled barley or 2 cups plus 2 tablespoons old-fashioned oats
3/4
cup whole wheat flour
1/2
teaspoon baking soda
1/2
teaspoon salt
1/4
teaspoon ground cinnamon
1/3
cup “heart-healthy” mixed nuts (peanuts, almonds, pistachios, pecans, hazelnuts)

Directions

  • 1 Heat oven to 350°F. Spray cookie sheet with cooking spray.
  • 2 In medium bowl, mix oil, sugars, mayonnaise, vanilla and egg with spoon. Stir in barley, flour, baking soda, salt and cinnamon. Stir in nuts.
  • 3 Drop dough by rounded measuring tablespoonfuls 2 inches onto cookie sheet.
  • 4 Bake 10 to 14 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheet to cooling rack.

Expert Tips

If you haven't seen rolled barley, look for it at your favorite co-op or health food store. It works well in place of old-fashioned oats (also called rolled oats) in many recipes.
