This is a wonderfully delicious recipe the I found in an old cook book .

large Eggs, seperated and at room temperature

cup Granulated sugar
3/4
cup Butter, room temperature
1
teaspoon Vanilla extract

ea. (9-inch) Pie crust pastry (store bought or your favorite), unbaked
  1. In medium mixing bowl, beat egg yolks with an electric mixer, set at medium speed; 1-minute. Gradually add sugar; beat 5-minutes or until light and fluffy.
  2. In another medium mixing bowl, or food processor, cream butter until light and fluffy. Add egg yolk mixture and whip well. Add vanilla and mix thoroughly. Divide mixture between 2 pie crusts, evenly. Bake in a preheated oven at 375-degrees for 15-20-minutes or until set.
  3. In another medium mixing bowl, beat egg whites until stiff peaks form.
  4. When pies are done baking, spread meringue over the tops, to 1-inch from the edge. Run under broiler until lightly browned. Serve hot or warm.
