Cherry-Merlot Brownie Bites

cup dried cherries

cup Merlot wine

box Betty Crocker™ Original Supreme Premium brownie mix

cup vegetable oil

  • 1 In small microwavable bowl, place cherries and wine. Microwave on High 1 minute. Cool 15 minutes.
  • 2 Meanwhile, heat oven to 350°F (325°F for dark or nonstick pan). Place mini paper baking cup in each of 42 mini muffin cups.
  • 3 Strain cherries, reserving 1/4 cup wine.
  • 4 In medium bowl, stir brownie mix, pouch of chocolate syrup, oil, egg, 1/4 cup reserved wine and the cherries until well blended. Fill each muffin cup with about 1 tablespoon batter or about 3/4 full.
  • 5 Bake 18 to 21 minutes or until toothpick inserted in edge of brownie bites comes out clean. Cool in pans 10 minutes. Remove from pans to cooling racks. Cool completely, about 30 minutes.

Expert Tips

Add 1/2 cup of chopped bittersweet chocolate to the brownie batter before baking.

If a recipe yields more mini cupcakes than your pan will make, cover and refrigerate the rest of the batter while baking the first batch. Cool the pan 10 to 15 minutes and then bake the rest of the batter, adding about 1 minute to the bake time.

Simplify brownies by baking in a 13x9-inch pan. Cut into small squares and serve in mini paper or foil baking cups.
