Bars

1
pouch Betty Crocker™ oatmeal cookie mix
1/2
cup butter, melted
1
egg
3/4
cup (8 oz) tart cherry preserves
2
cups Cascadian Farm® organic oats & honey granola

Icing

2
cups powdered sugar
1/4
cup heavy whipping cream

Garnish

1/2
cup fresh blueberries, blackberries or cherries, if desired

  • 1 Heat oven to 350°F. Lightly grease 13x9-inch pan with shortening or cooking spray. In large bowl, mix cookie mix, melted butter and egg until thick dough forms. Press dough evenly in pan.
  • 2 Spread preserves over cookie dough layer. Sprinkle granola evenly over preserves.
  • 3 Bake 30 to 35 minutes or just until cookie layer is set. Cool completely, about 1 hour.
  • 4 Cut into 4 rows by 3 rows to make 12 bars, or 4 rows by 4 rows to make 16 bars. Gently remove bars from pan; place on cooling rack or serving platter.
  • 5 In small bowl, stir together powdered sugar and whipping cream until thin icing forms. Pour icing into small resealable food-storage plastic bag; seal bag. Cut off 1 bottom corner of bag; drizzle icing over bars. Top each with a few fresh berries. Let icing set before serving. If not serving immediately, cover tightly and store in refrigerator until serving time.

Expert Tips

Don't have tart cherry preserves? Feel free to use any berry-based jam or preserves in this recipe for equally delicious results!

Don't have heaving whipping cream in your fridge? No worries! Milk or water will work just fine in the icing recipe. The final result won't be quite as thick or tasty as the cream version, but sometimes you've just got to substitute other ingredients when you're in a pinch!
