  • 1 Heat oven to 275°F. Grease bottom and sides of 13x9-inch pan. In large bowl, beat egg whites, cream of tartar and salt with electric mixer on high speed until foamy. Beat in 1 3/4 cups sugar, 1 tablespoon at a time; continue beating until stiff and glossy. Do not underbeat. Spread in pan.
  • 2 Bake 1 hour. Turn off oven; leave meringue in oven with door closed 12 hours.
  • 3 In large bowl, mix cream cheese, 1 cup sugar and the vanilla until smooth. In chilled medium bowl, beat whipping cream until stiff. Fold whipped cream and marshmallows into cream cheese mixture. Spread evenly over meringue. Refrigerate at least 12 hours but no longer than 24 hours.
  • 4 In medium bowl, mix all topping ingredients until well blended. Spoon over individual servings of dessert. Store in refrigerator.

EXPERT TIPS

Expert Tips

Raspberries or blueberries can be used instead of the strawberries. Better yet, combine all three!

Meringue making is easy, but you can’t rush the process. Be sure to beat egg whites to stiff, glossy peaks, and let dry out in the oven for at least 12 hours (overnight is best).

I have been making this dessert for over 30 yrs. It is my husband's favourite all-time dessert. What I like about it is...it is cheap to make, you can shape the meringue into different shapes and it is gluten free. The recipe can easily be doubled and you can try different toppings too. BE SURE TO SPRAY YOUR BROWN PAPER BAG LINER OR PARCHMENT PAPER WITH PAM....for the meringue to be removed easier.

I remember being a little girl (I'm 25 now) and my Grandma Jacki making this for my birthday every year. I have never had anything so freaking good in my whole life. This is my absolute favorite dessert ever, and now that she's older, I can make this for myself on my birthday, and whenever I have 3 days to make a phenomenal cake! I wish I could give this a trillion spoon rating =]

This is a time consuming recipe but well worth it. I had to bring something impressive to the first family Thanksgiving in 15 years and not only was it a hit, it was gluten-free. I wasn't paying close attention to the ingredients when I made it. All the kiddos with gluten allergies could eat it. (Watch the pie filling, though.) Definitely an A+ especially if eggs are on sale!
