box Betty Crocker® Gluten Free devil's food cake mix

tablespoon instant coffee granules or crystals

cup water
1/2
cup butter, softened

cup unsalted butter, softened

package (8 oz) gluten-free cream cheese, softened

cups gluten-free powdered sugar
1
container (8 oz) gluten-free mascarpone cheese
1
teaspoon gluten-free vanilla
Pinch of salt

cups cherry preserves
  • 1 Heat oven to 350°F. Grease bottom only of 9-inch round cake pan. In large bowl, beat cake mix, instant coffee, water, 1/2 cup butter and the eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
  • 2 Bake 45 to 52 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely, top side up, about 1 hour.
  • 3 In large bowl, beat 1 cup unsalted butter, the cream cheese and powdered sugar with electric mixer on medium speed until light and fluffy. Add mascarpone cheese, vanilla and salt; beat on low speed just until blended.
  • 4 Using serrated knife, cut cake in half horizontally to make 2 layers. Place bottom layer, cut side up, on serving platter. Spoon half of frosting onto cake layer; carefully spread, creating thick layer. Top frosted layer with half of the cherry preserves; spread to cover. Place remaining layer, cut side down, over filling. Top with remaining frosting; carefully spread to cover top. Spoon remaining preserves over cake; spread to cover. Refrigerate at least 2 hours before serving. Store loosely covered in refrigerator.

    This was absolutely the best cake I have ever had in my entire life (both before and after GF). I was a bit surprise on how the cake did not rise very high using this recipe, however, after assembling it with the layers of cream cheese frosting, it was big enough for me and my family. Next time I might just follow the recipe on the box for the cake and only add the instant coffee to it since I know the cake will rise much higher if I follow the box directions. Then I will only use the rest of the recipe for the frosting/toppings.

    Great recipe just 2 things, remember most "preserves" are NOT Gluten Free at regular stores so good luck with that but you can make your own, and if Gluten Free you are probably already use to that, and the second thing the picture shows a double cake but the recipe is for a single cake so unless you plan on cutting that darn cake in 2 sheets you will need to buy 2 Devils food mixes and double the recipe, that's what I did and it was great!
