I used to make crepes a lot in the past. This is great for those hot days here in TX where the heat is over 100 many days of summer. I might serve with a Mornay sauce or a small jar of commercial,cheesy alfredo sauce - Heat and add just a splash of prepared mustard, blend well and heat. Top after baking with very warm topping.

This is a delicious recipe. I am a vegetarian, and my husband is not one, but he liked the crepes. The only thing I will do differently next time is to prepare the crepes and cut up the vegetables ahead of time. I am definitely planning on making the recipe again.

I loved this recipe! I am vegetarian, but my son is not, however, he loved it too. The only thing I added was celery and a 4 cheese blend. My son topped them with sour cream and salsa. Beautiful and delicious! Highly recommend!

I''m trying to do more meatless dishes for my husband who was a strict vegetarian until he married me. These were great for dinner! I served them with fried potatoes, and surprisingly, the crepes are really filling. The only thing I might add would be a sauce or dressing of some sort. Any ideas?
