Cheesy Tomato-Beef Bake

Imagine a warm sandwich you eat with a fork. It's filled with everything you'd expect in a burger with the works.

Ingredients

lb lean (at least 80%) ground beef
1
teaspoon chili powder
1
cup sour cream
2/3
cup mayonnaise or salad dressing
1
cup shredded sharp Cheddar cheese (4 oz)
2
tablespoons finely chopped onion
2
cups Original Bisquick® mix
1/2
cup cold water
2
to 3 medium tomatoes, thinly sliced
3/4
cup chopped green bell pepper

  • 1 Heat oven to 375°F. Spray 13x9-inch pan with cooking spray. In 10-inch skillet, cook beef and chili powder over medium-high heat 6 to 8 minutes, stirring occasionally, until thoroughly cooked; drain. Set aside.
  • 2 In small bowl, mix sour cream, mayonnaise, cheese and onion; set aside.
  • 3 In medium bowl, stir Bisquick mix and cold water with fork until soft dough forms. Using fingers dipped in Bisquick mix, press dough in bottom and 1/2 inch up sides of pan. Layer beef, tomatoes and bell pepper on dough. Spoon sour cream mixture over top; spread evenly over vegetables to cover.
  • 4 Bake uncovered 25 to 30 minutes or until edges of dough are light brown.

This recipe can easily be cut in half to serve five. Use an 8-inch square (2-quart) glass baking dish and bake as directed.

For a chicken version of this Mexican bake, use 2 cups diced cooked chicken in place of the ground beef. You can omit step 2 and just toss the chicken with the chili powder.

I have made this recipe for 30 years! I first got it from an old bisquick book it was called California buger bake.the only thing different was it didn''t call for the chii powder,but now I will try that and change the cheese to Montery Jack,or how about don''t add the chili powder,and use pepperjack cheese,more for an adult taste!This has been a great favorite.Friends coming to visit me would bring their own tomatoes so I would make it!!

I have been making this for YEARS!!! back then in the 70's it was called California Burger Bake,I had a friend that when ever he visited he wanted me to make it, when I moved to The Keys he would bring me Jersey tomatoes to make!!! with tomato season on us now we WILL be eating this soon,the fresher tomatoes the better the taste,I sometimes will double the cheese,may combo cause the kids think of it as a type of pizza.

I get bored with food, so tonight I came online to my recipe box. I decided to try this one and since it's just me I cut the recipe down to half. I'll save leftovers for tomorrow. I added some frozen corn in with the tomatoes. It' delicious.
