Due to the content of certain ingredients often used in meat loaf, such as onions, celery and bell pepper, meat loaf may remain pink even though meat is cooked to 160°F doneness. Always check meat loaf with a thermometer to make sure it has reached 160°F in the center. Thermometer should read 160°F when inserted in center of loaf.
