cups Corn Chex®, Rice Chex® or Wheat Chex® cereal (or combination)

cups bite-size pretzel twists

cups bite-size cheese crackers

tablespoons butter or margarine

package (1 oz) ranch dressing and seasoning mix

cup grated Parmesan cheese
  • 1 In large microwavable bowl, mix cereal, pretzels and crackers.
  • 2 In small microwavable bowl, microwave butter uncovered on High about 30 seconds or until melted. Pour over cereal mixture; stir until evenly coated. Stir in dressing mix and cheese until evenly coated.
  • 3 Microwave uncovered on High 3 minutes, stirring after each minute. Spread on waxed paper or foil to cool. Store in airtight container.

This was ok, and I ate it and probably gained a couple of pounds! I appreciated the microwaving because I usually burn things like this in the oven! But.. I made a half recipe and had to add all of the dressing, butter and cheese because it didn't have enough on it. I added 1/2 tsp. of garlic powder too. For the rest of the ingredients, I'll probably try my recipe that I usually do with oyster crackers and see if it works out ok. It has the ranch dressing, popcorn oil, some garlic powder and lemon pepper. It just sits overnight in an unlit oven. I'll add some of the Parmesan to it though because that's a good addition.

I've been making this ranch Chex mix for parties and special occasions since first finding it in one of my Betty C. calendars a couple years ago. Very tasty - and extremely easy to fix. In fact, even my nine year old daughter can make this entirely by herself.
