Ingredients

beef tenderloin steaks, 1 inch thick (about 4 oz each)
1
tablespoon olive or vegetable oil
1/4
teaspoon garlic salt
2
plum (Roma) tomatoes, seeded, chopped (1/2 cup)
1/4
cup chopped fresh or 2 teaspoons dried basil leaves
1/4
cup shredded mozzarella cheese (1 oz)

  • 1 Set oven control to broil. Place steaks on rack in broiler pan. Brush both sides of steaks with oil; sprinkle with garlic salt.
  • 2 Broil with tops 4 to 6 inches from heat, turning once, until of desired doneness (10 to 15 minutes for medium, 160°F).
  • 3 Remove broiler pan from oven. Sprinkle steaks with tomatoes, basil and cheese. Broil about 1 minute or just until cheese begins to melt. Serve immediately.

For a meatless of this recipe, fresh portabella mushrooms make a great stand-in for the beef. Remove stems of mushrooms. Place mushrooms, stem sides up, in broiler pan. Brush with oil; sprinkle with garlic salt. Broil with tops about 6 inches from heat 4 to 5 minutes, turning once, until tender. Continue as directed.

Here’s a quick way to seed tomatoes: Cut tomato in half horizontally. Gently squeeze the halves to push out seeds. Use a spoon, if needed, to scoop out the remaining seeds.

I agree with kellyh1974...These comment boards are filled with comments about nutrition, ingredients and recipes no one has tried..I believe Facebook would be a good place for things like that..I thought these were for the purpose of reviewing recipes that people actually tried... I thought this was good..I had to cut it down a bit because I was only making it for 2 but I thought it was very good and my brother loved it as part of his birthday dinner...i will try again!
