Cheesy Italian Chicken Pie

Original Bisquick® mix provides a simple addition to this cheesy chicken pie - a mild Italian dinner!

Ingredients

cups cut-up cooked chicken
1 1/4
cups shredded mozzarella cheese (5 ounces)
1/3
cup grated Parmesan cheese
1/2
teaspoon dried oregano leaves
1/2
teaspoon dried basil leaves
1/2
teaspoon garlic powder
1
can (8 ounces) tomato sauce
1/2
cup Original Bisquick™ mix
1
cup milk
1/4
teaspoon pepper

eggs

  • 1 Heat oven to 400º. Grease bottom and side of pie plate, 9x1 1/4 inches, with shortening. Mix chicken, 1/2 cup of the mozzarella cheese, the Parmesan cheese, oregano, basil, garlic powder and 1/2 cup of the tomato sauce; spoon into pie late.
  • 2 Stir Bisquick, milk, pepper and eggs until blended. Pour over chicken mixture.
  • 3 Bake uncovered 35 minutes. Sprinkle with remaining 3/4 cup mozzarella cheese. Bake 5 to 8 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with remaining tomato sauce, heated if desired.

Doubling an Impossibly Easy Pie recipe is a breeze. Just double the ingredients and bake in either two 9-inch pie plates or in a 13x9-inch baking dish. If you use the baking dish, bake the pie for 10 minutes longer than the recipe indicates.
