Cheesy Chile and Egg Bake

Ingredients

package (12 oz) bulk pork sausage
1
bag (28 oz) frozen O'Brien potatoes with peppers and onions, thawed, drained
1
can (4.5 oz) Old El Paso® chopped green chiles, drained
1
package (8 oz) Monterey Jack cheese with jalapeño peppers, shredded (2 cups)

1/2
cup Original Bisquick® mix
1 1/4
cups milk
1
container (8 oz) sour cream
1
teaspoon salt
1
cup tortilla chips, crushed (1/2 cup)

  • 1 Heat oven to 350°F. In 10-inch skillet, cook sausage over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain.
  • 2 In large bowl, stir together sausage, potatoes, chiles and 1 cup of the cheese. Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
  • 3 In large bowl, beat eggs, Bisquick mix, milk, sour cream and salt with fork or wire whisk until blended. Pour over potato mixture.
  • 4 Bake 35 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with crushed chips and remaining 1 cup cheese. Bake about 5 minutes longer or until cheese is melted.

Turn this brunch dish into a tasty supper by serving your favorite taco toppers on the side. Try shredded lettuce, chopped fresh tomatoes, sour cream, sliced ripe olives and chopped green onions.

If you like, assemble the casserole the night before, but don’t bake it. Cover tightly and refrigerate until ready to bake. The next morning, uncover and bake as directed.

Took this to brunch at work , it was a hit even with a short reheat in microwave! I'm a bisquick fan and now I can access recipes with our Kindel in the kitchen.

Delicious!! It took a bit longer than stated to set in the oven, but I really enjoyed this. I used spicy sausage and served the bake with salsa, hot sauce, and sour cream as choices for on the side. I think it could use a bit of cracked pepper, but aside from that it tasted just fine as is.
