Cheesy Chicken Taco Casserole

Ingredients

box Chicken Helper™ crispy Cheddar bacon chicken
1
package (1 oz) Old El Paso™ taco seasoning mix
1
lb boneless skinless chicken breasts, cut into 3/4-inch pieces
2
cups water
1
cup milk
2
tablespoons vegetable oil
1/2
cup shredded Cheddar cheese (2 oz)
1
cup tortilla chips, coarsely crushed
Toppings, if desired (chopped tomatoes, green onions, salsa, sour cream)

  • 1 Heat oven to 350°F. Spray 8-inch square (2-quart) baking dish with cooking spray. In medium bowl, mix seasoned crumbs (from Chicken Helper box), 1 tablespoon of the taco seasoning mix and the chicken.
  • 2 In 2-quart saucepan, stir water, milk, uncooked pasta and sauce mix (from Chicken Helper box), and the remaining taco seasoning mix; heat just to boiling, stirring frequently. Reduce heat; simmer uncovered 10 to 12 minutes, stirring frequently, until pasta is slightly tender.
  • 3 In 10-inch nonstick skillet, heat oil over medium heat. Cook chicken in oil 3 to 5 minutes, stirring occasionally, until golden brown. Reduce heat to medium-low; continue to cook 3 to 5 minutes or until no longer pink in center.
  • 4 Mix pasta and chicken in baking dish. Top with cheese and crushed tortilla chips. Bake uncovered about 20 minutes or until sides are bubbling. Serve with Toppings.
