Made the recipe today just as written and couldn't believe how great the strips came out. I used "Better Cheddar" crackers and they worked well to make a crispy coating. My boyfriend (who is a cheddar cheese fanatic) loves these. Will definitely be asked to make these a lot now but they're so easy and fast that I won't mind:)

These were really good. I used Roasted Vegetable Ritz for the cracker crumbs. I also used chicken thighs for the meat since chicken breast cost more than a good steak. Clean up was really easy. I crushed the crackers by putting them in a heavy gallon zip bag, then rolling over them many times with my rolling pin. I added the cheese to the bag. And just threw the bag out when I was done. No blender or food processor crumb mess to clean up. Next time I'm going to put the egg in another gallon zip bag. It will probably be easier to get all the chicken pieces coated, and clean up will be a snap. I lined my cookie sheet with Reynolds nonstick foil, sprayed very lightly with cooking spray. Then I gave the top of the chicken pieces a light spray. Finicky kid and hubby loved this, so did I.

There are no finiky kids in our home, but my husband and I both think this is great!! Sent this recipe to my daughter, and my grand-daughter (who only eats chicken with bones!!), enjoyed it too. There are now two families loving this recipe.

Will try with saltines next time. Kids weren't super thrilled wit the cheese crackers. It is a nice alternative to fried & frozen tenders.

I'll definitely be trying this. It's hard to find a recipe that's easy to prepare and is healthier because it's not fried. I might substitute regular saltines for the cheese crackers.
