Cheesy Chicken Oven Fries

Ingredients

2 1/2
cups frozen cottage fries (half of 2-lb bag)
1 1/2
cups chopped deli rotisserie chicken (without skin)
1/4
cup mayonnaise
1/2
teaspoon garlic powder
1/2
teaspoon chili powder
1 1/2
cups shredded Cheddar cheese (6 oz)
1/2
cup chopped precooked bacon (8 slices from 2.1-oz package)
Sour cream, if desired
Ketchup, if desired

Directions

  • 1 Heat oven to 450°F. Line 15x10x1-inch pan with foil. Bake cottage fries as directed on bag.
  • 2 Meanwhile, in small bowl, mix chicken, mayonnaise, garlic powder and chili powder.
  • 3 Sprinkle 1 cup of the cheese evenly over hot cottage fries. Spoon chicken mixture evenly over cheese. Sprinkle with remaining cheese and the bacon.
  • 4 Bake 3 to 5 minutes longer or until cheese is melted. Serve with sour cream and ketchup.

Not exactly health food, but the family loves it. Quick, easy, and a breeze to clean up when you use foil. I make it with seasoned waffle fries, and toss some frozen, chopped spinach in with the chicken and cheese to up the nutrition. Tastes much like stuffed potato skins from a restaurant.

I use waffle fries instead of cottage fries, so they are extra crispy! This is a weekly recipe in my house, where time is really limited when it comes to dinner-making. It's super fast, really easy and best of all, great tasting!!
