Cheesy Chicken and Broccoli Bake

medium onion, chopped (1/2 cup)

cup chopped bell pepper

box (9 oz) Green Giant® frozen cut broccoli, partially thawed

eggs

cups milk

cup Gold Medal® all-purpose flour

cup grated Parmesan cheese

teaspoon salt
3/4
teaspoon dried basil leaves

teaspoon pepper
1
cup shredded Cheddar cheese (4 oz)

Directions

  • 1 Heat oven to 400°F. Spray 13x9-inch (2-quart) glass baking dish with cooking spray. Sprinkle chicken, onion, bell pepper and broccoli in baking dish.
  • 2 In medium bowl, mix remaining ingredients except Cheddar cheese until smooth; pour over chicken mixture.
  • 3 Bake 20 to 25 minutes or until knife inserted in center comes out clean. Sprinkle with Cheddar cheese. Bake 3 to 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving.

I made this for dinner using the alternate suggestion of asparagus and was very disappointed. It had little flavor(had no flavor of basil or pepper). The egg and flour mixture had the consistency of paste. I threw away over half of it.

It was very good. The parmesan cheese really added flavor. I used cooked turkey instead of the chicken because that's what I had on hand. I would make this again.

A great way to use up left over veggies! I was uncertain what chicken and egg would taste like together, it was good. Easy to put together, simple, nice for a week night meal.
