Made this with dinner tonight. Delicious! I used shredded cheddar cheese instead of the processed cheese (velveeta)and used french fried onions on top instead of toasted breadcrumbs..it was a Hit! Easy to make, and everyone loved it.

This recipe is the best! I used 2 cups of rice (instead of one), and a little more broccoli and onions. It turned out better than I could have expected! This recipe rivals any restaurant style casserole of this kind - bar none! It is also a great way to get your kids to eat their veggies (my toddlers went back for 2nds)!

Delicious as a side or a full meal. I made it with pepper jack velveeta to give it more kick and used more rice and broccoli than what the recipe called for.
