it was really great and i will make this one many more times how ever i used real red potatoes and not Swiss cheese but smoked Gouda cheese my kids loved it and so did i

Made this last night for the first time without reading the reviews beforehand. I used rotisserie chicken and shredded Italian blend cheese instead of the Swiss. It was extremely thick when I just followed the recipe so I ended up adding the rest of the chicken broth. It ended up being an easy, great tasting, very filling soup that is definitely a keeper. The hubby finished it off!

There was left-over from lunch which I served to my husband before going out for dinner tonight. Guess what---he asked for a second serving and finished off by saying "perfect"!!! I also had 2 servings for myself and noticed that the soup has become even tastier.

My first time to try this...made some modifications---used fresh broccoli, local quickmelt cheese, diced potatoes and added some diced red bell pepper and celery. My husband gave my own concoction a rating of 4.

This soup was absolutely delicious! After reading reviews I made the following changes: 12oz bag fresh broccoli 3 potatoes diced 1 1/2 cartons of chicken broth 1 cup cubed Velveeta cheese 3/4 tsp cayenne pepper I cooked the fresh broccoli and potatoes, then added everything else and cooked until the potatoes were soft. This made a TON, and it is just as delicious left over! Of course my edits blew the calorie counts....

Love this! I use ham instead of chicken, and cheddar cheese instead of swiss. Then I add some diced potatoes, Italian seasoning, and a pinch of cayenne pepper. Everyone always wants a second serving.

I love this soup.I have always made potato,cheese and red pepper soup in the winter and this is another great twist. I changed the recipe slightly, I added fesh broccoli,half of a fresh diced red pepper,whole wheat flour instead of white flour,cooked and diced fresh red-potatoes instead of the dry postatoes(I leave the skins on,it's delicious that way,I do the same thing with my masshed potatoes)a pinch of garlic and a SMALL amount of velveeta and a quarter cup of sharp cheddar. I may try using a dash of wine while cooking this soup next time to see what that does for the flavor.

Well liked by all in my family; it even comes in as a request every now and then. We use cheddar instead of swiss and it's great, but in a pinch we'll throw in whatever bits of cheese we may have left over and it's still good. I've also added extra potato flakes sometimes to make it thicker and I always serve it with fresh bread on the side.

I was slightly disappointed with this recipe. It was actually very easy to make though. I doubled this recipe because I there were 8 people at dinner that night. Everyone was a little disappointed. Basically everyone had the same review of it. It would have been much better to use cheddar cheese rather than mozzarella and swiss.
