I love this soup.I have always made potato,cheese and red pepper soup in the winter and this is another great twist.
I changed the recipe slightly,
I added fesh broccoli,half of a fresh diced red pepper,whole wheat flour instead of white flour,cooked and diced fresh red-potatoes instead of the dry postatoes(I leave the skins on,it's delicious that way,I do the same thing with my masshed potatoes)a pinch of garlic and a SMALL amount of velveeta and a quarter cup of sharp cheddar.
I may try using a dash of wine while cooking this soup next time to see what that does for the flavor.
