This is one fantastic dish as written, and can be so versatile. I doubled the amount of green pepper and onions in my quest to fit in more veggies to our daily diets. Any pork product (ham, bacon, sausage) would also be excellent addition. This is an economical, nutritious meal to make any time of day. This fed 2 adults and 4 children until satisfied, with 2-3 servings left for next day office leftovers. I've made it twice and only had the recipe for a week.

I loved it! I used homemade roasted red peppers instead of raw, my husband was not thrilled with the over whelming pepper taste, so if like peppers, use them, if don't, leave them out. I did have to cook it longer than 25 mins, about 30-35 mins and the last 5 mins I raised the heat to 375 instead of 325.
