Cheesy Bacon Burger Bites

leaves romaine lettuce, cut into 28 (1 1/2-inch) pieces

cup Original Bisquick® mix
1
lb ground beef
1
egg
1/4
cup mayonnaise
1
teaspoon Worcestershire sauce
1/4
teaspoon salt
1/4
teaspoon pepper
2
oz Cheddar cheese, cut into 1/4-inch cubes (about 1/2 cup)

  • 1 In 10-inch nonstick skillet, cook bacon over medium heat, turning often, until browned but not overly crisp. Drain on paper towels. Discard all but 1 tablespoon drippings. Cut each bacon slice into 4 pieces.
  • 2 On each toothpick, thread 1 tomato half, 1 bacon piece and 1 lettuce piece; set aside.
  • 3 In large bowl, mix remaining ingredients except cheese. Fold in cheese. Shape tablespoonfuls of mixture into meatballs; flatten slightly to resemble hamburgers.
  • 4 In same skillet, heat bacon drippings over medium-high heat. Cook burgers in drippings 2 to 3 minutes on each side or until meat is no longer pink. Insert 1 toothpick in each burger; serve immediately.

I don't know how good these were because they were gone before I ever got a chance to try one! That says a lot!! I used BBQ sauce in place of the Worcestershire sauce and some of the mayo and used finely shredded cheddar-jack. A must-have for me was a dill pickle round! Also, it's a bit messy to have a whole tomato on top, so I cut each in half and put the cut side down. I saw some of the guys struggling with the idea that it had no bun, so next time I think I will add a small piece of thinly sliced baguette to the bottom of the burger!
