Cheese Straw-Spinach Casserole

Ingredients

tablespoons butter or margarine

large onion, finely chopped (1 1/2 cups)

cloves garlic, finely chopped
2
packages (8 oz each) cream cheese, softened

tablespoons Gold Medal® all-purpose flour

eggs
1/2
teaspoon salt
1/4
teaspoon pepper
1 1/2
cups half-and-half or milk
5
boxes (9 oz each) Green Giant® frozen chopped spinach, thawed, squeezed to drain
2
cups shredded Cheddar cheese (8 oz)
2
cups cheese straws, coarsely crushed

  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Cook onion and garlic in butter, stirring frequently, until golden.
  • 2 In large bowl, mix cream cheese and flour until smooth. Add eggs, one at a time. Stir in salt and pepper. Beat in half-and-half with wire whisk until blended. Add spinach, Cheddar cheese and onion mixture. Spoon mixture into baking dish. Sprinkle with cheese straws.
  • 3 Bake uncovered 30 to 35 minutes or until hot and bubbly.

This is delicious! I prepared this for our spring break potluck at work. Everybody loved it and even asked for the recipe. Also, one of our assistants does not like much of spinach but he said that it is really good. He even took some home! I like this too because I can prepare it the night before then cook it in the morning while getting ready for work. Make sure to place it in the refrigerator and the cook it on the next day. I am going to make more of this.
